Lemon Butter Tilapia & Lemon Fried Rice

Two more new delicious recipes!! These two recipes found in two separate places pair perfectly together. The tilapia recipe came from a Costco cooking book Lars' parents gave us and the Lemon Fried Rice came from www.allrecipes.com. I was in charge of making the tilapia and Lars was in charge of making the fried rice.

Lemon Butter Tilapia Recipe

Create the topping with paprika, fresh parsley, and crushed red pepper. In a skillet melt butter and add garlic and olive oil.

In a baking dish, spread half of the butter mixture over the tilapia and half of the topping. Bake for 8 minutes at 375. Top with the remaining butter mixture and topping and bake for another 6-8 minutes.

Lemon Fried Rice Recipe

The ingredients needed.

We use Jasmine Rice... cook according to package.

Melt butter and saute green onions and parsley.

Mix in rice, salt, lemon juice, soy sauce, and hot sauce.

Fry the rice and stir well. Then, it's ready to eat!

The finished result.... and it was absolutely delicious!!!

Our audience..... Kirin  was busy watching while we were busy cooking... he's just too cute not to include....

Breckenridge Beer Fest 2011

It's that time of year again.... Breckenridge Beer Fest time!!! We have started to make this event each year our family get together with Lars' Family and every year we have so much fun. We have started staying up in Breckenridge overnight at Pine Ridge Condominiums. It is so fun to get to stay together and create great memories! As always we start off the the stay with lunch at Rasta Pasta... a mix between Italian and Jamaican cuisine. Lars always gets their Spicy Rasta Pasta and I always get their Spaghetti Knuckles. Anything you get there is great!!

 

  

After we have filled our bellies with delicious food it's time to head on over to the beer fest and sample beers from all across Colorado and hopefully find some new favorites.

 

Once the fun of trying new beers has come to an end.... it's time for dinner!!! We tried the Quandary Grille because everyone was in the mood for a hamburger and fries. This place definitely hit the spot!

Then it was on to our condo where we got dressed to hit the hot tub! And wow was that relaxing! 

We are already in wait for the fun to be had next year!!!
